Cheese lovers rejoice, because this one’s for you. Tramsheds and Omnom Cheese Making partnered together to bring boozy cheese making classes to Sydney’s Inner West.

Marly, the founder of Omnom, started up her business with the intention of teaching city dwelling-foodies just how easy it is to make your own cheese. As a cheese-loving university student, Marly knew she couldn’t continue buying halloumi every week, so thought it was about time to start making her own. Fast forward a few years and Marly offers a variety of classes, fit for both night owls and morning risers, ranging from bocconcini and burrata, to chevre and halloumi. Not only are they fun, Marly’s recipes are super fast and require minimal equipment, catering to time-poor apartment-living Sydney Siders which make up a lot of Sydney’s inner suburbs.

I’m never one to say no to a burrata – or bubbles – so I swung by Tramsheds one evening to give cheese making a go for myself. The classes are run in a sectioned off area in the centre of Tramsheds, so you’re immersed in ambience of the surrounding dining spaces. After enjoying a glass of bubbles the class kicks off with an instructional up at the kitchen benches. It’s clear the recipes have been tried and tested, as Marly provides reasoning for every step of the process, including which milk to buy, the amount of citric acid to use, and the texture of the mixture. While many hard cheeses, like cheddar, can take up to three years to mature, you can whip together mozzarella in only 80 mins, making it perfect for beginner classes.

Throughout the demonstration and the physical cheese making, Marly is friendly, instructive, and approachable. It’s clear she’s well practiced, yet it never seems rehearsed, making her both incredibly likeable and well versed in her craft. She encourages simply having fun with the process, rather than getting caught up in the finer details, so it’s easy to feel like you’re nailing the process even when the stracciatella from your burrata leaks out onto the table. Safe to say it’s harder than it looks when Marly does it, but it’s still huge amounts of fun.
