With the expert guidance of Keith Klein, co-owner of Grace & Taylor and former head barista at Devon Group, we have developed a guide for coffee brewed with the V60 method. Give it a go and compare your cup to Klein’s; this Friday, April 19 Grace & Taylor will only be serving filter coffee at their Newtown location 3/292 King Street, 2042 Newtown, New South Wales.

You will need

- Cup

- V60 funnel

- V60 filter papers

- Scale and timer

- 15 grams of ground coffee

Step 1

Place the funnel on top of the cup and unfold the filter paper, placing it in the funnel.

Step 2

Thoroughly rinse the filter paper with boiling water and then discard the water.

Step 3

Place 15 grams of coffee in the V60 brewer and pour in 50 grams of water to immerse the grinds. Start the timer. Stir the coffee/water slurry well to fully saturate the grinds.

Step 4

After 30 seconds pour 100 grams of water in a spiral motion from the centre outwards.

Step 5

At one minute and 30 seconds pour another 100 grams of water as before.

Total brew time should be between two and a half and three minutes.
