Led by head baker Kiriakos Metaxotos, a Thessaloniki native, The Good Filo is baking at midnight, preparing the fresh bread and desserts for the 6 am opening. There’s a village-style bread and a Greek sourdough, as well as all the desserts you’d expect from a Greek eatery. Greek standards like galaktoboureko and Bougatsa are served warm and fresh along with a range of biscuits to take home. It doesn’t end at traditionalism for The Good Filo, with dishes like the Galaktobourekocroissant, a croissant filled with the cream of a galaktoboureko, or a Tsoureki, a sweet bread saved for Easter made in a variety of flavors including Oreo and Nutella.
