The Chroma Dinner: A uniquely vibrant culinary experience comes to Sydney for Vivid


Sydney winters are no longer a sombre, stay at home affair; the introduction of Vivid Sydney a decade ago has consistently brought Sydneysiders out of their houses and into the city. This year, a colourful gastronomical experience awaits you at the Four Seasons Hotel Sydney to match the bright lights outside.

More than merely a dinner, The Chroma Dinner is a sensory experience, combining sight, smell, sound, and of course; taste. Following the RGB (Red, Green, Blue) colour scheme essential to imagery creation, Head Chef Francesco Mannelli of Mode Kitchen & Bar has created three monochromatic dishes and a multicoloured dessert, all designed to take you on an immersive sensory and culinary journey, with each dish accompanied by a meticulously crafted cocktail or drink by Roderick Boerma.

Four Seasons Hotel Sydney has transformed a dining space into a blank canvas, with the unique BroomX projector. The immersive, VR experience transports guests from the jungle to under the sea using elaborate projections.



The vibrant evening kicked off with a viridescent display in the Amazon jungle, with an entree of Hiramasa kingfish, native green ants and a herbal chlorophyll pour over, with a green savannah jelly cocktail on the side, served among the sounds of forestry and wildlife. The meal was enhanced by the scent of wildflowers wafting from the menu, providing the perfect accoutrement to the dish.

Guests were then taken from the Amazon to the reef, with the sweet scent of coconuts signalling the beginning of the blue experience. The Choma dinner blended elements of Italian cuisine with Japanese; pairing a creamy spanner crab risotto with a strong yet crisp Toko Junmai Ginjo sake. During the second course, the dining space was a deep azure hue, with guests enjoying their risotto under the sea.

The penultimate course brought with it the most instagrammable moment of the night, with masked lantern-carrying men marching into the room to signal the onset of the red course. The room took on a red and orange hue, resembling a fireside, whilst the Devil's Bath dish made for a refreshing palate shift from the previous creamy risotto; ruby snapper was served with tart blood-like strawberry gazpacho and crisp radish. The strawberry fields gin-based cocktail was a crowd favourite and made for a sweet accompaniment to the woody campfire scent.



The final course unites the RGB colour palette, with dessert providing a canvas in the form of a white chocolate, vanilla, and mandarin sphere, accompanied by blueberry, raspberry, and pistachio cream, along with a paintbrush for guests to design their own dessert, all served in a psychedelic sound and light scheme with a cotton candy scent to match.
